  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup ricotta cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon zest
  • ½ cup honey
  • 1 teaspoon chili flakes
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons chopped pistachios
  • 1 tablespoon fresh parsley or chives, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the carrots with olive oil, garlic powder, sea salt, and black pepper.
  3. Spread the seasoned carrots on a baking tray in one layer and roast for 20-25 minutes until golden brown and tender.
  4. While the carrots roast, blend ricotta cheese, heavy cream, lemon zest, salt, and pepper in a food processor until smooth. Chill until serving.
  5. For the hot honey, gently warm honey in a small saucepan over low heat; stir in chili flakes and apple cider vinegar. Let it cool slightly.
  6. To serve, spread whipped ricotta on a plate, layer with roasted carrots, drizzle with hot honey, and garnish with chopped pistachios and herbs.
