  • 10 oz Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 large egg
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 cups whole milk
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Simmer the heavy whipping cream over medium heat until hot.
  2. Pour the hot cream over the chocolate chips in a metal bowl and let sit for 5 minutes before stirring until smooth.
  3. In another bowl, whisk together sugar, egg yolks, and cocoa powder until smooth.
  4. Heat the whole milk in a saucepan until simmering.
  5. Gradually add the hot milk to the egg mixture while whisking to prevent curdling.
  6. Return the mixture to low heat and cook while stirring until slightly thickened.
  7. Strain the custard into the chocolate ganache and mix well.
  8. Stir in vanilla extract and chill in the refrigerator for at least 4 hours or overnight.
  9. Churn in an ice cream maker according to manufacturer instructions (about 35 minutes).
  10. Freeze in an airtight container for an additional 2-4 hours before serving.
