- 1/4 cup fresh cilantro, roughly chopped
- 2 green onions, thinly sliced
- 1/3 cup roasted unsalted peanuts, roughly chopped
- Juice of 2–3 limes (about 1/4 cup)
- 2 tbsp fish sauce (or low-sodium soy sauce)
- 1 tbsp maple syrup
Instructions
- Wash all produce thoroughly. Peel and dice the mangoes. Slice the red bell pepper and cucumber into matchsticks. Chop the cilantro and green onions.
- In a small bowl, whisk together lime juice, fish sauce or soy sauce, and maple syrup until well combined.
- In a large mixing bowl, toss together mangoes, bell pepper, cucumber, cilantro, green onions, and peanuts.
- Pour the dressing over the salad mixture and gently toss until everything is coated.
- For best results, let the salad sit in the fridge for about 15-30 minutes before serving to enhance flavors.
