Ingredients

Scale
  • 4 cups fresh kale, chopped
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup walnuts, chopped and toasted
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse kale leaves under cold water, remove tough stems, and tear into bite-sized pieces. Place in a large bowl and massage with olive oil until tender.
  2. Slice peaches into wedges and add to the kale bowl along with blueberries.
  3. Toast walnuts in a dry skillet over medium heat until fragrant; then add to the salad.
  4. In a small bowl, whisk together balsamic vinegar, honey/maple syrup, salt, and pepper. Drizzle over the salad just before serving.
  5. Toss gently to combine all ingredients.
