Ingredients
- 1 1/2 cups crushed chocolate cookies
- 1/4 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries, plus extra for garnish
- Optional: Raspberry coulis
Instructions
- Preheat oven to 325°F (163°C) and line a mini muffin tin with paper liners.
- In a bowl, combine crushed chocolate cookies and melted butter; press into muffin cups.
- Bake crusts for 5 minutes; let cool.
