Ingredients
- 200g chickpeas (soaked overnight)
- 1 head of celery
- 1 garlic bulb
- 1 potato (peeled and halved)
- Olive oil

- 1/4 tsp chilli flakes

- Cook the soaked chickpeas in fresh water with half the garlic bulb, sage, and potato for about 1.5 hours until tender.
- Remove the sage, celery stalks, and squeeze out the roasted garlic.
- Mash the potato into the chickpea mixture; season with salt, pepper, and olive oil.
- Prepare the celery by chopping it into small pieces and sauté in olive oil with garlic and spices until softened.
- Combine cooked chickpeas with sautéed celery; simmer briefly before adding lemon juice and zest.
