Ingredients

  • 200g chickpeas (soaked overnight)
  • 1 head of celery
  • 1 garlic bulb
  • 1 potato (peeled and halved)
  • Olive oil
  • 1/2 lemon (juiced and zested)
  • 1/2 tsp fennel seeds
  • 1/4 tsp chilli flakes

Instructions

  1. Cook the soaked chickpeas in fresh water with half the garlic bulb, sage, and potato for about 1.5 hours until tender.
  2. Remove the sage, celery stalks, and squeeze out the roasted garlic.
  3. Mash the potato into the chickpea mixture; season with salt, pepper, and olive oil.
  4. Prepare the celery by chopping it into small pieces and sauté in olive oil with garlic and spices until softened.
  5. Combine cooked chickpeas with sautéed celery; simmer briefly before adding lemon juice and zest.
  6. Serve warm.
