Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy (about 2–3 minutes).
  3. Mix in pumpkin puree, egg yolk, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add dry ingredients to the wet mixture; stir gently until just combined.
  6. Drop dough by tablespoons onto prepared baking sheets.
  7. Bake for 10–12 minutes until edges are set; cool on baking sheets for 5 minutes before transferring to a wire rack.
  8. For frosting: Beat cream cheese and butter until smooth; mix in powdered sugar, vanilla extract, and salt until fluffy.
