  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp granulated sugar
  • 1/2 cup unsalted butter (cold)
  • 15 oz pumpkin puree
  • 14 oz sweetened condensed milk
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • pinch of all-spice
  • pinch of ground cloves

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar. Cut in cold butter until crumbly. Add cold water until dough holds together; refrigerate for 30 minutes.
  2. Preheat oven to 425°F (220°C).
  3. Roll out chilled dough into a circle and fit it into a pie dish.
  4. Mix pumpkin puree, condensed milk, eggs, salt, and spices in a bowl until smooth.
  5. Pour filling into the crust and bake for 15 minutes at 425°F (220°C). Reduce temperature to 350°F (175°C) and bake for an additional 35–40 minutes.
  6. Cool completely before slicing.
