  • ½ cup brown sugar packed
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In one bowl, combine flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until smooth, then add sugars and mix until fluffy. Incorporate egg yolk and vanilla.
  3. Gradually add dry ingredients to the wet mixture until combined.
  4. For the filling, mix together an egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla until smooth.
  5. Form dough balls on the cookie sheet with indentations for filling. Fill each indentation with pumpkin mixture.
  6. Roll in coarse sugar before baking for about 15 minutes or until edges are golden.
