- 3/4 cup (168 g) unsalted butter, softened
- 1 cup (220 g) brown sugar, packed
- 2 egg yolks, at room temperature
- 2 tsp vanilla extract
- 1 cup (130 g) powdered sugar
- 1 tsp vanilla extract
- 2–4 tsp whole milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together softened butter and brown sugar until fluffy. Add canned pumpkin puree, vanilla extract, and egg yolks; mix until well combined.
- In another bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually blend dry ingredients into the wet mixture until just combined.
- Use a cookie scoop to drop dough onto the prepared baking sheet with space for spreading.
- Prepare the streusel by mixing additional flour, brown sugar, butter, and pumpkin pie spice until crumbly; sprinkle over each cookie.
- Bake for about 11 minutes until edges are golden and centers remain soft. Cool on a wire rack before drizzling with icing made from powdered sugar, vanilla extract, and milk.
