  • 1 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)

  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf or round cake pan by greasing it well.
  2. In one bowl, mix the dry ingredients: flour, cinnamon, baking powder, baking soda, nutmeg, and salt.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  4. Blend in the pumpkin puree until smooth.
  5. Gradually fold the dry mixture into the wet ingredients until just combined, then stir in warm milk.
  6. Pour batter into the prepared pan and bake for 45-55 minutes depending on the pan used; check doneness with a toothpick.
