Ingredients

  • 375 g Puff Pastry Sheet (ready rolled)
  • 400 g Mincemeat
  • 40 g Dried Cranberries
  • Zest of 1 Clementine
  • 1 Egg (beaten)
  • 1 tbsp Icing Sugar

Instructions

  1. Preheat your oven to 200°C (180°C fan/Gas 6) and line two baking sheets with paper.
  2. Unroll the puff pastry and spread the mincemeat evenly over it, leaving a small gap on the edges.
  3. Sprinkle dried cranberries and clementine zest onto the mincemeat.
  4. Roll up the pastry tightly from the long edge and chill in the fridge for 15 minutes if possible.
  5. Slice the roll into approximately 2cm thick pieces and arrange them on the baking sheets.
  6. Brush each slice with beaten egg for a shiny finish.
  7. Bake for 15-17 minutes until golden brown, then cool for 10 minutes before dusting with icing sugar.
