  • 1 tbsp olive oil
  • 400g chicken or turkey sausages (any flavor)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain flour
  • 1 litre chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 medium potatoes (peeled and cut into chunks)
  • 375ml plant-based cream or half-and-half
  • Salt to taste

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Remove sausage from casings and cook until golden brown. Transfer to a plate.
  2. In the same pot, sauté onion, celery, and carrots over low heat for about 10 minutes until softened. Add garlic and thyme; cook for another 30 seconds.
  3. Sprinkle flour over the mixture, stirring until combined. Gradually add chicken stock while stirring, then add bay leaves and wild rice. Bring to a simmer and cook for about 30 minutes.
  4. Add cubed potatoes and cook for another 15 minutes until tender.
  5. Stir in cream gently, seasoning with salt to taste before serving hot.
