- 1 medium onion, diced
- 4 cups cooked pinto beans (or 2 cans, drained and rinsed)
- 1 can (10 oz) diced tomatoes with green chiles
- 1 can (4 oz) diced green chiles
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp ground cumin (optional)
- 1/2 tsp smoked paprika (optional)
- Salt and black pepper, to taste
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
- Add the diced onion to the pot and sauté until softened (about 3–4 minutes).
- Stir in chili powder, cumin, smoked paprika, salt, and pepper.
- Add cooked pinto beans, diced tomatoes with green chiles, diced green chiles, and beef broth. Mix well.
- Bring the soup to a boil; then reduce heat and cover. Simmer for about 30 minutes.
