  • 1 medium onion, diced
  • 4 cups cooked pinto beans (or 2 cans, drained and rinsed)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (4 oz) diced green chiles
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  2. Add the diced onion to the pot and sauté until softened (about 3–4 minutes).
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  4. Add cooked pinto beans, diced tomatoes with green chiles, diced green chiles, and beef broth. Mix well.
  5. Bring the soup to a boil; then reduce heat and cover. Simmer for about 30 minutes.
  6. Taste and adjust seasoning as desired. For a thicker consistency, mash some beans against the pot's side and stir back in.
  7. Serve hot in bowls topped with chopped cilantro or lime wedges.
