  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract

  • 1 cup crushed pineapple (drained)
  • 1/2 cup sour cream
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice

Instructions

  1. Preheat your oven to 325F (165C) and grease a Bundt pan.
  2. Cream together the softened butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla and pineapple extracts.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix dry ingredients into the butter mixture alternately with sour cream.
  4. Fold in the drained crushed pineapple.
  5. Pour batter into the prepared pan and bake for 75-85 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes before transferring to a wire rack.
  7. For the glaze, mix powdered sugar with reserved pineapple juice until smooth, then drizzle over the cooled cake.
