- 1 large fresh pineapple
- 4 kiwis
- 8–10 fresh mint leaves
- 2 limes
- 2 tablespoons honey
Instructions
- Toast the Coconut: In a skillet over medium-low heat, add shredded coconut. Cook while stirring frequently until lightly browned (about 3-5 minutes). Remove from heat and set aside.
- Prepare the Fruits: In a large bowl, cube the pineapple and add it in. Slice each kiwi in half; use a spoon to scoop out the fruit and cut it into bite-sized pieces. Add the kiwi to the bowl along with julienned mint leaves.
- Make the Dressing: In a small bowl, zest both limes then squeeze their juice into the bowl. Add honey and whisk until well combined. Pour this dressing over the fruit mixture and gently toss to coat evenly. Cover and refrigerate until ready to serve.
