  • 2 tablespoons honey

  • 2 cups jasmine rice
  • 4 cups water

Instructions

  1. Prepare the jasmine rice by boiling water in a pot, adding the rice, covering it, and simmering for about 15 minutes until water is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and ginger; sauté for about 30 seconds until fragrant.
  3. Add the chicken to the skillet, season with salt and pepper, and cook until browned on all sides (about 6–8 minutes).
  4. Stir in sliced onion, red bell pepper, yellow bell pepper, and pineapple chunks; cook for an additional 5 minutes until vegetables are tender.
  5. Mix soy sauce, honey, and sriracha in a bowl; pour over the chicken mixture and stir well to coat everything evenly. Cook for another 2–3 minutes.
  6. Fluff cooked jasmine rice with a fork before serving the pineapple chicken over it. Garnish with fresh cilantro.
