  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper
  • 1/4 cup green onions
  • Sesame seeds (for garnish)

Instructions

  1. Prepare all ingredients by chopping the chicken into bite-sized pieces, mincing the garlic, dicing the red bell pepper, and slicing the green onions.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken pieces and cook until golden brown for about 5–7 minutes. Add garlic last minute for flavor.
  3. In a mixing bowl, combine soy sauce, pineapple juice, honey or brown sugar, rice vinegar, and cornstarch mixed with water until smooth.
  4. Pour the sauce over the cooked chicken in the skillet, add pineapple chunks and diced red bell pepper, and stir to coat evenly. Simmer for about 5 minutes until heated through.
  5. Serve over cooked rice and garnish with green onions and sesame seeds.
