  • ½ cup soy sauce
  • ⅓ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped

Instructions

  1. Heat oil in a skillet over medium-high heat. Sauté cubed chicken until browned and cooked through (5-7 minutes). Remove chicken and set aside.
  2. In the same pan, sauté minced garlic for about 30 seconds. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; let simmer for 2-3 minutes.
  3. Mix cornstarch with water until smooth; gradually add to the sauce while stirring until thickened (about 1 minute).
  4. Return chicken to the pan along with pineapple chunks and red bell pepper; stir to coat with sauce.
  5. Add cooked rice; mix thoroughly and heat through (2-3 minutes).
  6. Garnish with chopped green onions before serving.
