  • 2 tbsp olive or sesame oil
  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey
  • 1 tbsp rice or apple cider vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)
  • Optional: sesame seeds, red pepper flakes

Instructions

  1. Heat olive or sesame oil in a skillet over medium heat. Sauté diced chicken until fully cooked; remove from pan.
  2. In the same skillet, add minced garlic and sauté until fragrant. Pour in soy sauce, pineapple juice, honey, and vinegar; mix well.
  3. Add cornstarch mixed with water to thicken the sauce slightly.
  4. Return chicken to the pan along with pineapple chunks and diced red bell pepper; stir gently.
  5. Incorporate cooked rice into the mixture until evenly combined and heated through.
  6. Serve immediately, garnished with green onions or sesame seeds if desired.
