- 1 cup jasmine rice
- 1 cup fresh cilantro
- ½ cup mayonnaise
- 2 tablespoons lime juice
- ¼ cup onion (diced)
- 2 cups chicken stock
- 2–3 cloves garlic (minced)
- 2 tablespoons oil of choice
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 cup frozen peas
- 1 tablespoon butter/oil
- 2–3 garlic cloves (minced)
- 1 teaspoon turmeric
- ¼ teaspoon EACH cumin, onion powder, salt, pepper
- 2 whole jalapeño chiles (roughly chopped)
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon or lime juice
- Kosher salt and freshly ground black pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Marinate the chicken in garlic, lime juice, oil, cumin, paprika, salt, and pepper for at least one hour.
- Preheat your grill or oven to medium-high (450°F).
- Cook the marinated chicken for 5-7 minutes per side on the grill or bake for approximately 30 minutes until fully cooked (165°F internal temperature).
- Rinse jasmine rice until water runs clear; sauté onion and garlic in butter before adding rice and seasoning.
- Pour in chicken stock; bring to a boil, cover, reduce heat, and simmer for about 15 minutes.
- Prepare the green sauce by blending cilantro, mayonnaise, jalapeños, garlic, olive oil, lemon/lime juice together until smooth.
- Serve chicken over rice with green sauce drizzled on top.
