  • 130 g walnuts
  • 2 tbsp olive oil
  • 900 g diced lamb shoulder
  • 2 onions
  • 3 garlic cloves
  • 90 g dried cranberries
  • 3 tbsp pomegranate molasses
  • 2 tbsp honey
  • 500 ml chicken stock
  • 1 tbsp chopped parsley to garnish
  • 1 tbsp chopped mint to garnish
  • 450 g basmati rice
  • 1 tbsp unsalted butter
  • 5 cardamom pods
  • 1 bay leaf
  • ½ cinnamon stick
  • ½ tsp ground turmeric
  • ¼ tsp salt
  • 950 ml hot vegetable stock (or water)

Instructions

  1. Finely grind walnuts and set aside.
  2. Heat olive oil in a heavy-bottomed pot; sauté onions until translucent, then add minced garlic.
  3. Stir in ground spices and toast for a minute.
  4. Brown the diced lamb shoulder in the pot for about 5-7 minutes.
  5. Add cranberries, pomegranate molasses, honey, and chicken stock; bring to a simmer.
  6. Cover and cook on low heat for 70 minutes.
  7. Serve hot over basmati rice, garnished with parsley and mint.
