  • 250g chicken breast fillet, diced
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 medium onion, roughly chopped
  • 2 tbsp soy sauce
  • 1 tbsp plant-based oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp vegetable oil
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt

Instructions

  1. Rinse basmati rice under cold water until clear. In a pot, combine rice, water, and a pinch of salt. Bring to boil, then cover and simmer for about 15 minutes until water is absorbed.
  2. In a wok or large skillet, heat vegetable oil over medium heat. Sauté minced garlic briefly until fragrant.
  3. Add diced chicken breast and cook until golden brown on all sides.
  4. Mix in chopped onion and bell peppers; stir-fry for 2-3 minutes until tender yet crisp.
  5. Pour in soy sauce, plant-based oyster sauce, chili flakes, and black pepper. Toss until well-coated and heated through.
  6. Serve hot over fluffy rice.
