Scale
  • 2 cups all-purpose flour (or gluten-free blend)
  • 1 cup light brown sugar
  • 1/2 cup unsalted butter (melted) or coconut oil
  • 2 large eggs
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/2 cup whole milk (or almond/oat milk)
  • 1 cup finely chopped pecans
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, combine melted butter, brown sugar, eggs, sour cream, milk, and vanilla extract. Mix until smooth.
  4. Gradually add the wet mixture into the dry ingredients using a rubber spatula until just combined; don’t overmix.
  5. Fold in the finely chopped pecans gently.
  6. Spoon batter into muffin cups about three-quarters full and top with whole pecan halves if desired.
  7. Bake for 20-22 minutes or until a toothpick comes out clean.
  8. Let muffins cool in the tin for about 5 minutes before transferring them to a wire rack.
