  • 2 ripe pears (Bosc or Anjou), peeled, cored, sliced
  • 1 cup ground almonds (almond flour)
  • 1/2 cup plain flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake tin by greasing it and lining it with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until pale and fluffy.
  3. Add the eggs one at a time, beating well after each addition, followed by the vanilla extract.
  4. In another bowl, combine the ground almonds, plain flour, and baking powder; fold this mixture into the butter mixture until just combined.
  5. Gently mix in the sliced pears, reserving some for decoration on top.
  6. Pour the batter into the prepared tin, smooth out the top, arrange reserved pear slices on top, sprinkle with sliced almonds, and bake for 45–55 minutes until a toothpick comes out clean.
  7. Allow cooling in the tin for 10 minutes before transferring to a wire rack.
