- 16 ounces rotini pasta
- 1 medium cucumber (chopped)
- 1 pint grape tomatoes (halved)
- 1 small bell pepper (chopped)
- ¼ cup finely diced red onion
- 1 cup Italian dressing
- ⅔ cup crumbled feta cheese
- ¼ cup sliced black olives
- 3 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- 1. Bring a large pot of water to a boil and add salt. Cook the rotini according to package instructions until al dente.
- 2. While the pasta cooks, chop the cucumber, halve the grape tomatoes, dice the bell pepper, and finely chop the red onion.
- 3. Drain the cooked pasta in a colander and rinse under cold water until cooled.
- 4. In a mixing bowl, combine the cooled pasta with prepared vegetables, Italian dressing, feta cheese, olives, and parsley. Season with salt and pepper to taste.
