Ingredients
- 1 lb ground beef
- 1 small yellow onion (diced)
- 2 medium carrots (diced)
- 3 ribs celery (diced)
- 2 cloves garlic (minced)
- 29 oz diced tomatoes (with liquid)
- 15 oz dark red kidney beans (drained and rinsed)
- 15 oz cannellini beans (drained and rinsed)
- 15 oz tomato sauce
- 8 oz Ditalini pasta
- 1 cup beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp pepper
- 1 tsp sugar
Instructions
- In a Dutch oven over medium heat, brown the ground beef for about 7 minutes until fully cooked.
- Drain excess grease and add diced onion, carrots, and celery. Cook for about 10 minutes until softened; add minced garlic and sauté for another 1-2 minutes.
- Stir in diced tomatoes, beans, tomato sauce, broth, and seasonings. Simmer for approximately 20 minutes.
- Cook Ditalini pasta separately according to package instructions; drain.
- Just before serving, stir the drained pasta into the soup mixture and enjoy topped with fresh herbs if desired.
