  • 2 eggplants
  • 1 lb ground lamb or beef
  • 1 large sweet onion
  • 3 cloves garlic
  • 1 can (14 oz) canned tomatoes
  • 1/4 cup unsalted butter
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1 cinnamon stick
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice eggplants into rounds, salt them for 30 minutes to draw out moisture, rinse, and pat dry.
  3. Sauté eggplant in olive oil until golden brown; set aside.
  4. Cook chopped onion until translucent, add minced garlic, then brown the meat.
  5. Stir in canned tomatoes and cinnamon stick; simmer for 15-20 minutes.
  6. For the béchamel sauce, melt butter, whisk in flour, gradually add milk until thickened; stir in cheese.
  7. Layer half the eggplant and half the meat mixture in a baking dish, repeat layers, then top with béchamel sauce.
  8. Cover with foil and bake for 30 minutes; remove foil and bake uncovered for another 15-20 minutes until golden brown.
  9. Let rest for at least 15 minutes before serving.
