Ingredients
- 1 tablespoon olive oil
- 1 red onion
- 3 large cloves garlic
- 1 carrot (diced)

- 120 grams orzo pasta
- 1.5 liters vegetable stock
- Fresh dill (for garnish)
- Salt & pepper to taste
- Juice of half a lemon
Instructions
- Finely chop the garlic and onion; dice the carrot and leek. Heat olive oil in a large pot over medium heat, add vegetables, season with salt and pepper, and sauté for about 6 minutes until softened.
- Prepare vegetable stock by dissolving a stock cube in boiling water using a whisk.
- Add orzo pasta and stock to the pot along with dried thyme. Simmer gently for approximately 12 minutes until orzo is al dente.
- Adjust seasoning if needed, incorporating lemon juice and fresh dill before serving.
- Ladle into bowls and garnish with extra virgin olive oil and dill sprigs.
