  • 1 tablespoon olive oil
  • 1 red onion
  • 3 large cloves garlic
  • 1 carrot (diced)
  • 1 leek (diced, green ends included)
  • 1 teaspoon dried thyme
  • 120 grams orzo pasta
  • 1.5 liters vegetable stock
  • Fresh dill (for garnish)
  • Salt & pepper to taste
  • Juice of half a lemon

Instructions

  1. Finely chop the garlic and onion; dice the carrot and leek. Heat olive oil in a large pot over medium heat, add vegetables, season with salt and pepper, and sauté for about 6 minutes until softened.
  2. Prepare vegetable stock by dissolving a stock cube in boiling water using a whisk.
  3. Add orzo pasta and stock to the pot along with dried thyme. Simmer gently for approximately 12 minutes until orzo is al dente.
  4. Adjust seasoning if needed, incorporating lemon juice and fresh dill before serving.
  5. Ladle into bowls and garnish with extra virgin olive oil and dill sprigs.
