  • 1 Tbsp orange zest – zest of 1 large orange
  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup full-fat sour cream, room temperature
  • 1/4 cup water, room temperature
  • 1/4 cup freshly squeezed orange juice
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour or gluten-free flour blend
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • For the Orange Curd Filling:
  • 1/3 cup granulated sugar
  • 1 Tbsp orange zest – zest of 1 large orange
  • 2 large egg yolks or 1 large egg
  • 3 Tbsp freshly squeezed orange juice
  • 1/4 tsp fine salt
  • 2 Tbsp unsalted butter, cut into small pieces
  • For the Fresh Orange Frosting:
  • 1 cup unsalted butter, room temperature
  • 1 Tbsp orange zest – zest of 1 large orange
  • 1 tsp vanilla extract
  • 1/4 tsp fine salt
  • 3 1/2 cups powdered sugar
  • 3 Tbsp fresh orange juice

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
  2. In a bowl, mix granulated sugar with orange zest; add butter and beat until fluffy.
  3. Incorporate sour cream, water, and orange juice; then add egg and vanilla.
  4. In another bowl, whisk flour, baking powder, and salt; gradually fold into wet mixture.
  5. Fill liners two-thirds full and bake for 19 minutes or until toothpick comes out clean.
  6. For the orange curd filling, whisk sugar, zest, yolks, juice, and salt in a saucepan over medium heat until thickened; stir in butter pieces until melted.
  7. Make the frosting by beating butter until creamy; gradually add powdered sugar and mix in more zest and juice until fluffy.
  8. Once cooled, fill cupcakes with curd and frost as desired.
