  • 1 pound ground chicken, beef, or turkey
  • 1 yellow onion, chopped
  • 12 jalapeños, seeded and chopped (to taste)
  • 2 cloves garlic, minced or grated
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 2 1/2 cups red enchilada sauce
  • 1 cup dry long grain rice
  • 1/2 cup fresh cilantro, chopped (plus more for serving)
  • Juice of 1 lime
  • 2 cups tortilla chips
  • 12 cups shredded Mexican cheese
  • Sliced avocado and yogurt (for serving)

Instructions

  1. Preheat your oven to 425 degrees F.
  2. In a large oven-safe skillet, heat olive oil over high heat. Add ground chicken and onion; cook until browned (about 5 minutes). Stir in jalapeños, garlic, smoked paprika, cumin, and salt; cook for 1 minute.
  3. Pour in enchilada sauce and add water; bring to a boil. Stir in rice, cover with a lid, and reduce heat to low. Cook for about 15 minutes until most liquid is absorbed.
  4. Remove from heat; stir in cilantro and lime juice. Top with cheese and gently press tortilla chips into the mixture. Bake for 10 minutes until cheese is melted.
  5. Serve warm topped with avocado slices, extra cilantro, and yogurt.
