  • 1.5 lbs boneless, skinless chicken breasts (bite-sized pieces)
  • 2 tbsp olive oil
  • 1 bell pepper (cut into chunks)
  • 1/2 cup diced onion
  • 1 tbsp minced garlic
  • 3/4 tsp ginger powder
  • 4 tbsp soy sauce
  • 3 tbsp brown sugar
  • 2 cups pineapple (tidbits or chunks)
  • 2/3 cup pineapple juice
  • 1¼ cups chicken broth
  • 2 tbsp cornstarch

Instructions

  1. Select the sauté function on your Ninja Foodi and heat olive oil. Sauté diced onion until soft (about 3 minutes).
  2. Add chicken pieces, cooking until no longer pink.
  3. Stir in minced garlic, ginger powder, red pepper flakes, and salt; cook for 1 minute.
  4. Pour in soy sauce, brown sugar, pineapple juice, and chicken broth, mixing well.
  5. Gently fold in pineapple and bell pepper. Turn off the pot.
  6. Seal the Ninja Foodi lid and pressure cook on high for 6 minutes; perform a quick release.
  7. Return to sauté mode; mix cornstarch with water until smooth and stir into the pot to thicken sauce.
  8. Serve over rice or quinoa.
