  • 4 lbs lamb shoulder, bone-in
  • 1 cup dried apricots, chopped
  • 1/2 cup toasted slivered almonds
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika

Instructions

  1. Prepare the ingredients by chopping dried apricots and slicing the onion. Mince the garlic.
  2. Heat a Dutch oven over medium-high heat and add oil. Sear the lamb shoulder on all sides until browned (about 5 minutes per side).
  3. Remove the lamb and sauté sliced onions in the same pot until softened (3-4 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  4. Return the lamb to the pot, add chopped apricots and toasted almonds.
  5. Season with spices: insert cinnamon stick and sprinkle ground cumin, coriander, ginger, ground cinnamon, and smoked paprika.
  6. Cover and reduce heat to low; braise for about 3 hours or until the lamb is fork-tender.
  7. Let rest before serving.
