  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1 can diced tomatoes (14-ounce)
  • Chopped cilantro and parsley for garnish

Instructions

  1. In a small bowl, mix paprika, cumin, ginger, cinnamon, and salt. Rub the spice mixture over the chicken thighs.
  2. Heat olive oil in a Dutch oven over medium-high heat; brown chicken thighs on both sides for about 5 minutes each.
  3. Remove chicken and sauté chopped onion until softened (about 5 minutes). Add garlic and tomato paste; cook for another minute.
  4. Pour in chicken broth and diced tomatoes, scraping the pot's bottom. Return browned chicken to the pot.
  5. Bring to a boil then reduce heat to low. Cover and simmer for about 30 minutes until chicken is tender.
  6. Stir in chopped preserved lemon and olives; simmer uncovered for an additional 10 minutes.
  7. Discard the cinnamon stick before serving. Garnish with fresh herbs if desired.
