  • 1 cup finely shredded zucchini
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ½ cup granulated sugar (for cinnamon swirl)
  • 1 tablespoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix the wet ingredients: zucchini, eggs, oil, yogurt, and vanilla until combined.
  3. In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Prepare the cinnamon swirl by mixing sugar and cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture on top. Add remaining batter and top with remaining cinnamon mixture; gently swirl through the batter using a knife.
  7. Bake for 60-65 minutes until golden brown; check doneness with a toothpick.
  8. Cool in the pan for 10-15 minutes before transferring to a wire rack.
