- 1 cup finely shredded zucchini
- 2 eggs
- ½ cup vegetable oil
- ½ cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- ½ cup granulated sugar (for cinnamon swirl)
- 1 tablespoon cinnamon (for cinnamon swirl)
Instructions
- Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.
- In a large bowl, mix the wet ingredients: zucchini, eggs, oil, yogurt, and vanilla until combined.
- In another bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Prepare the cinnamon swirl by mixing sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture on top. Add remaining batter and top with remaining cinnamon mixture; gently swirl through the batter using a knife.
- Bake for 60-65 minutes until golden brown; check doneness with a toothpick.
- Cool in the pan for 10-15 minutes before transferring to a wire rack.
