  • 2 sticks Butter (Cold, cubed (1 cup) (use vegan butter for vegan version))
  • 1 tsp Salt
  • 4 tsp Sugar
  • 1/2 cup to 3/4 cup Water (Ice cold, divided (use only as needed))
  • 3/4 cup Blueberries
  • 1/2 tbsp Corn Starch
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla extract
  • 1 pound Strawberry (chopped)
  • 2 tbsp Corn starch
  • 1/2 cup Sugar
  • 1 tsp Vanilla extract
  • Salt (a pinch)
  • 1 large Egg (for egg wash; for eggless version you can brush with cream or whole milk or non-dairy milk or simply water)
  • 3 to 4 tbsp Sugar (to sprinkle on top)

Instructions

  1. Prepare the Pie Crust: Mix flour, salt, and sugar; incorporate cold butter until crumbly. Add cold water gradually to form dough. Refrigerate for 30 minutes.
  2. Make the Filling: Combine chopped strawberries and blueberries with sugar, corn starch, salt, and vanilla extract.
  3. Roll Out Dough: Preheat oven to 425°F (220°C). Roll out dough and fit into pie dish; fill with berry mixture.
  4. Assemble Pie: Cover with second dough layer. Brush with egg wash or cream/milk and sprinkle sugar on top.
  5. Bake: In preheated oven for 35-40 minutes until golden brown and bubbly. Cool before serving.
