Ingredients
- 100 g softened unsalted butter
- 100 g caster sugar
- 65 g light brown soft sugar
- 1 large egg
- 1 tsp vanilla extract
- 215 g plain flour
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/4 tsp salt
- 100 g milk chocolate chips
- 125 ml double cream
- 125 g dark chocolate
- 15 g butter
Instructions
- Preheat your oven to 180°C (Fan/Gas Mark 6). Grease a 12-hole cupcake tin and line it with baking paper.
- In a stand mixer, cream together softened butter, caster sugar, and light brown sugar until fluffy. Add in the egg and vanilla extract, mixing until combined.
- Gradually incorporate plain flour, baking powder, bicarbonate of soda, and salt until mixed. Fold in crushed mini eggs and milk chocolate chips.
- Divide dough into 12 equal portions and shape into balls, placing them in the cupcake tin holes. Press the dough up against the sides to create a dip in each cup.
- Bake for about 12 minutes or until golden brown. Allow to cool fully before using a shaping tool to press down any risen centers.
- For the ganache, melt dark chocolate, butter, and double cream in a microwave-safe bowl until smooth. Fill each cooled cookie cup with ganache and top with three mini eggs.
