  • 115 g unsalted butter (melted or room temp)
  • 135 g light brown soft sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (or 170ºC for fan ovens) and line a 9×9 inch baking tray with parchment paper.
  2. In a mixing bowl, combine melted butter with both sugars using a whisk until well mixed.
  3. Add the egg and vanilla extract, whisking until fully incorporated.
  4. Mix in plain flour, cornflour, bicarbonate of soda, and salt until you have a consistent dough.
  5. Fold in milk chocolate chips and most of the mini eggs gently.
  6. Press the dough into the lined baking tray and top with remaining mini eggs.
  7. Bake for about 18–22 minutes or until the top appears dry.
  8. Allow cooling completely before cutting into squares.
