  • 1.25 cups vegetable broth
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 medium red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • to taste salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and season with oregano, garlic powder, paprika, salt, and pepper.
  3. Spread vegetables on a parchment-lined baking sheet and roast for 20-25 minutes until tender.
  4. Meanwhile, bring vegetable broth to a boil in a medium saucepan. Stir in couscous, cover, and let sit for 5 minutes before fluffing with a fork.
  5. Combine roasted vegetables with couscous and sliced olives; toss gently.
