  • 12 oz dry pasta (farafalle)
  • 1 English cucumber
  • 1 pint cherry tomatoes
  • 2/3 cup kalamata olives
  • 4 oz feta cheese
  • 1 medium red onion
  • 1/4 cup extra virgin olive oil
  • 3 tbsp red apple vinegar
  • 1 tbsp lemon juice
  • Fresh herbs and spices

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and cool under cold water.
  2. Dice the cucumber, halve the tomatoes, and slice the onion. Combine in a mixing bowl.
  3. In another bowl, whisk together olive oil, vinegar, lemon juice, oregano, honey, garlic, salt, and pepper.
  4. Add cooled pasta to the vegetable mixture. Pour dressing over and toss gently.
