  • 8 boneless skinless chicken thighs
  • 1 red onion
  • 5 tbsp extra virgin olive oil
  • 2 lemons
  • 1 cup fresh dill
  • 1 1/4 cups Greek yogurt
  • 1 garlic clove, minced
  • 10 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/2 tsp allspice
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground green cardamom
  • Salt and pepper
  • Pinch cayenne pepper (optional)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Make the dill Greek yogurt sauce by blending garlic, dill, Greek yogurt, olive oil, lemon juice, and cayenne pepper in a food processor until smooth.
  2. Prepare the chicken seasoning by mixing minced garlic, paprika, allspice, nutmeg, cardamom, salt, pepper, and olive oil in a small bowl. Rub this mixture onto the chicken thighs.
  3. Marinate the chicken atop sliced onions mixed with lemon juice and olive oil for at least 2 hours in the refrigerator.
  4. Preheat your grill to medium-high heat. Grill the marinated thighs for about 5 minutes on each side or until fully cooked.
  5. Let the chicken rest for 5 minutes before serving with the dill Greek yogurt dip.
