Ingredients
- 1 can (15 oz) chickpeas (rinsed and drained)
- 2 mini cucumbers (chopped)
- 1 tablespoon red onion (chopped)
- 1 tablespoon fresh oregano (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 red bell pepper (chopped)
- 1 cup little tomatoes (halved)
- 1/2 cup Kalamata olives
- 3.5 ounces feta cheese
- 2 tablespoons olive oil
- 1/2 tablespoon lemon juice
- 1 clove garlic (minced)
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine the rinsed chickpeas and chopped vegetables: cucumbers, red onion, oregano, parsley, bell pepper, and tomatoes.
- Add Kalamata olives and crumble feta cheese over the top.
- In a separate small bowl, whisk together the olive oil, lemon juice, and minced garlic. Pour over the salad.
- Toss gently to mix all ingredients evenly. Season with salt and pepper to taste.
