Ingredients
- grilled chicken breast
- 2 hard-boiled eggs
- sliced avocado
- 1 cup chopped romaine lettuce
- cup cherry tomatoes, halved
- cup cucumber, diced
- 2 tbsp crumbled feta cheese
- 2 tbsp Kalamata olives
- 1 tbsp extra virgin olive oil
- 1 tsp apple vinegar or lemon juice
- Salt & black pepper to taste
- Chopped fresh parsley (optional)
Instructions
- Boil eggs for 7-8 minutes until desired doneness. Cool in ice water, peel, and quarter.
- In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes; toss gently to mix.
