  • grilled chicken breast
  • 2 hard-boiled eggs
  • sliced avocado
  • 1 cup chopped romaine lettuce
  • cup cherry tomatoes, halved
  • cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil eggs for 7-8 minutes until desired doneness. Cool in ice water, peel, and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes; toss gently to mix.
  3. Layer the salad base in a serving bowl with sliced grilled chicken on top. Add sliced avocado, quartered eggs, crumbled feta cheese, and Kalamata olives.
  4. Drizzle with extra virgin olive oil and apple vinegar or lemon juice. Season with salt and black pepper. Optionally sprinkle with chopped parsley before serving.
