Ingredients
- 8 cups organic celery, peeled and sliced thinly
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 1/3 cup red onion, thinly sliced
- 1/2 cup extra-virgin olive oil
- 1/4 cup lemon juice
- 1 tablespoon Dijon mustard
- 1–1/2 teaspoons dried oregano
- 3 tablespoons kalamata olives, pitted and chopped
- 1 clove garlic, grated
- Kalamata olives for garnish
Instructions
- Rinse all vegetables under cold water and pat dry. Slice celery diagonally and chop herbs. Halve cherry tomatoes and slice red onion thinly.
- In a large mixing bowl, combine celery, tomatoes, parsley, basil, red onion, kalamata olives, and feta cheese (if using).
- In a separate bowl or mason jar, whisk together olive oil, lemon juice, garlic, Dijon mustard, oregano, and chopped kalamata olives.
