- 3–4 medium bananas (or 2 large bananas)
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter (softened)
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- For the Maple Glaze: 1/4 cup unsalted butter, 1/2 cup pure maple syrup, 1/4 tsp ground cinnamon, 1/2 tsp vanilla extract, 1 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
- In a small bowl, mash bananas and mix with brown sugar, vanilla extract, and cinnamon.
- In a large bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time.
- Sift flour, baking soda, and salt into the mixture; stir until just combined.
- Fold in the banana mixture gently until incorporated.
- Pour batter into prepared pan(s) and bake for 35-40 minutes (or until a toothpick comes out clean).
- Cool in the pan for about 10 minutes before transferring to a wire rack.
