  • 34 medium bananas (or 2 large bananas)
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • For the Maple Glaze: 1/4 cup unsalted butter, 1/2 cup pure maple syrup, 1/4 tsp ground cinnamon, 1/2 tsp vanilla extract, 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
  2. In a small bowl, mash bananas and mix with brown sugar, vanilla extract, and cinnamon.
  3. In a large bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time.
  4. Sift flour, baking soda, and salt into the mixture; stir until just combined.
  5. Fold in the banana mixture gently until incorporated.
  6. Pour batter into prepared pan(s) and bake for 35-40 minutes (or until a toothpick comes out clean).
  7. Cool in the pan for about 10 minutes before transferring to a wire rack.
