- 375 g eating apples (e.g., russets)
- 45 g butter
- 60 g caster sugar (plus extra for topping)
- Grated rind of 1 lemon
- 45 g plain flour or cornflour (cornstarch)
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla bean paste
- 60 g demerara sugar (for topping)
- ½ teaspoon ground cinnamon
Instructions
- Preheat your oven to 180°C (350°F).
- Peel, core, and slice both types of apples. Place in a saucepan with a little water over medium heat until softened.
- In a bowl, cream together butter and caster sugar until fluffy. Mix in lemon rind and flour.
- Gradually whisk in warm milk until smooth. Add egg yolks and vanilla paste; mix well.
- Layer softened apples in a baking dish and pour custard mixture over them.
- Sprinkle demerara sugar mixed with cinnamon on top.
- Bake for about 20 minutes or until golden brown.
