  • 4 boneless, skinless chicken breasts (68 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices cooked chicken breast (for assembly)
  • 48 slices Swiss cheese
  • 3 tablespoons olive oil or vegetable oil
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Pinch of salt and black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) if baking.
  2. Place chicken breasts between plastic wrap and pound them to about ½ inch thick.
  3. Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs.
  4. Dredge each chicken breast in flour, dip in egg, then coat in panko breadcrumbs.
  5. Cook by baking on a greased sheet for about 25 minutes or frying until golden brown on both sides.
  6. Top each chicken piece with a slice of cooked chicken breast and Swiss cheese; return to the oven to melt the cheese if desired.
  7. Serve hot drizzled with tangy sauce made from mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper.
