  • 2 cups apple vinegar
  • 2 cups low-sodium beef stock
  • 1 tablespoon Worcestershire sauce

  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare all vegetables by chopping them to ensure smooth cooking.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat and sear the lamb shanks until browned on all sides (about 3-4 minutes per side). Remove from the pot.
  3. Sauté the chopped onions, carrots, celery, and minced garlic in the same pot for about five minutes until softened.
  4. Stir in tomato paste and cook for an additional minute before deglazing with apple vinegar and beef stock.
  5. Return the lamb shanks to the pot along with Worcestershire sauce, rosemary, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low and cover. Simmer for about two hours or until tender.
  7. Optionally thicken gravy by mixing flour with some cooking liquid before stirring it back into the pot and simmering until thickened.
