Ingredients
- 1 1/2 lemons
- 1 bunch scallions
- 1/3 cup plus 3 tablespoons olive oil
- 10 ounces feta cheese
- 4 ounces cream cheese
- Black pepper for seasoning
- Cayenne for seasoning
- 1 tablespoon hot water
Instructions
- Preheat your broiler and line a sheet pan with foil.
- Juice one lemon and set aside; slice the remaining half into thin rounds.
- Toss scallions and lemon slices with olive oil on the sheet pan.
- Broil scallions for about 7-9 minutes, adding lemon slices for an additional 5 minutes until charred.
- In a food processor, blend feta, cream cheese, remaining olive oil, reserved lemon juice, black pepper, cayenne, and hot water until smooth.
- Stir in most charred scallions and adjust flavor with extra lemon juice if desired.
- Serve garnished with reserved scallions and enjoy!
