Description

  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour
  • 1 tablespoon milk (optional)
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until smooth. Stir in rolled oats, flour, and optional milk until combined.
  3. Press the mixture into an 8×8-inch baking dish evenly to form the base.
  4. In another bowl, whisk together eggs, honey, lemon zest, lemon juice, and flour until well-blended. Pour over the prepared oat base.
  5. Bake for 25-30 minutes or until edges are golden brown and center is set.
  6. Allow to cool completely before cutting into squares.
