Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together unsalted butter and granulated sugar until smooth. Stir in rolled oats, flour, and optional milk until combined.
- Press the mixture into an 8×8-inch baking dish evenly to form the base.
- In another bowl, whisk together eggs, honey, lemon zest, lemon juice, and flour until well-blended. Pour over the prepared oat base.
- Bake for 25-30 minutes or until edges are golden brown and center is set.
- Allow to cool completely before cutting into squares.
